Meet the Chef
I am an Award-winning Chef based in Canada's beautiful national capital - Ottawa, Ontario. I was born in Winnipeg (ironic!) and my family originates from Trinidad & Tobago. I also have an Engineering degree from UOttawa and spent most of my professional life in environmental management prior to becoming a Chef. I love the opportunity to blend my Caribbean Heritage and Canadian Nationality to create traditional and innovative flavours!
Several years ago, I left the Government of Canada and pursued professional training at Algonquin College to become a Chef - a second dream come true after Engineering. I integrate my heritage, my engineering background and culinary skills to innovate products and recipes.
I am incredibly proud to have represented the High Commission for Trinidad & Tobago to win top honours for the Embassy Chef Challenge - Championship and People's Choice Awards.
I'm delighted to be part of Ottawa’s food and Caribbean culture and have a depth of gratitude for my team and family for supporting me in this!
How We've Grown
We started off in our local ethnic community fairs and Ottawa's Beechwood Market and have grown to be a part of several local markets, artisan shows, festivals as well as our establishment and catering.
The declaration of the pandemic in 2020 resulted in big changes for our operating model - but it also taught us to pivot to meet the needs of our customers. We are not afraid of change and we aim to please! We are so excited that our customers can also shop us online and on social and love collaborating with partners and putting Baccanalle on store shelves! And by the way - so what does Baccanalle mean? Baccanalle is a play on the word "Bacchanale" which means scandal or wild celebration in the Caribbean. We hope that your Baccanalle experience will be a wild celebration for your tastebuds...we will leave the scandal to others!
Supporting Our Community
Over the past few years, we've proudly supported local community groups, health-based charitable initiatives, Afro-Caribbean Youth & Cultural Associations, local not-for-profit groups, and more.
For 2020 we are focussed our contributions on supporting vulnerable communities and Frontliners with meals. In April 2020 we became a restaurant partner with Ottawa's Meals for Hope and Baccanalle supported more than 100 meals in the first month of joining alone. In the spring of 2020, we were part of a network of Love Local Delivery restaurants participating in Feeding Our Community - supporting meals for frontline workers at Ottawa’s Carefor Health & Community Services and its vulnerable clients. In the fall of 2020, Chef Resa and her Sister, Tracey Solomon, embarked on a new business partnership - starting up Afrotechture - designed to showcase Black Canadian Artisans in-store, online and on social!
The venture is gratifying personally and professionally as they implement ways to create benefits for the community in their enterprise.
Chef Resa is incredibly honoured to have been awarded a Black History Ottawa Community Builder Award for her support and dedication to Ottawa's Black Community.
